GUIDANCE FOR FOOD BUSINESS OPERATORS

The new Food Hygiene (England) Regulations 2006 came into force on 11th January 2006.

A major change in the law is that all food businesses now have to write down what they do to make food that is safe to eat.

The Food Standards Agency has developed a pack for small catering businesses called Safer Food Better Business to help them comply with the new regulations.

Safer Food Better Business is made up of safe method sheets and a diary. The safe method sheets highlight things that are important to make food safe to eat and ask food business operators to write down how they do things in their own businesses. Advice is also given on what to do if things go wrong.

The safe methods are divided into five sections and take about one hour to complete each section.

The diary is designed to help food business operators run their businesses effectively and safely. Each day you sign the diary to confirm that your safe methods have been followed. There is also space to make a note of anything different that happens or if anything goes wrong.

Your Environmental Health Officer or Food Safety Officer will be able to give you more information and guidance on Safer Food Better Business when they visit your business for a routine food hygiene inspection.
